CONIGLIO RIPIENO

INGREDIENTI PER 5-6 PERSONE:

  • 1 CONIGLIO DA CIRCA 1 KG
  • 2 UOVA
  • 2 FETTE DI MORTADELLA
  • PARMIGIANO GRATTUGIATO
  • PREZZEMOLO
  • OLIO EXTRAVERGINE
  • VINO BIANCO
  • BURRO
  • SALE E PEPE

Procedimento:

Aprite il coniglio, stendetelo sul dorso e disossatelo. Se non siete sicuri di questa operazione, fatela fare al vostro macellaio di fiducia.

Quando il coniglio sarà ben pulito, salatelo e pepatelo.

Sbattete ke 2 uova insieme al parmigiano ed al prezzemolo e preparate una frittata.

Adagiatevi sopra le fette di mortadella e la frittata.

Chiudete il coniglio e legatelo ben stretto, come un salame.

Far sciogliore una noce di burro insieme all’olio ed adagiatevi il coniglio, rosolandolo bene da tutte le parti.

Sfumate con il vino bianco.

Una volta evaporato il vino continuate la cottura per 50 minuti.
